Country Spare Ribs and Sauerkraut


  • 3-4 lbs country style spare ribs
  • 1 carrot, grated
  • 2 onions, thinly sliced
  • 1 Tbsp butter
  • 1 tsp caraway seed
  • 1 qt. sauerkraut
  • 3 large tart apples, cored, and cut in rings
  • 1 /1/2 cup white wine
  • pepper, salt

Quickly brown ribs in butter in hot skillet. Mix grated carrot with kraut, carway seed, salt and pepper. Place half in casserole in which you plan to serve dish. Cover kraut mixture with half onions and applke rings. Top with browned spare ribs. Add remaining onions and apples. Pour wine over all and bake in preheated oven at 350 degrees for 1, 5 hours Serve with mashed potatoes, pumpernickel bread and cold beer
